Carole Soule used to be a vegetarian before she started Miles Smith Farm in Loudon, N.H. But now, she raises beef and pork, and she’s dedicated to understanding her food sources. In that spirit, she agreed to let me and Concord Monitor readers tag along for six months - between February and August of 2016 - as Pink 2.0 the pig was raised for slaughter. (Pink 1.0 was crushed by her mother a few days into my reporting).

Though the cyclical reality of life and death can be uncomfortable, Soule said she prefers her new lifestyle and intimacy with these animals to her old grocery store habits. 

 “The fact that we won’t eat something we know – it’s so crazy,” Soule said. “You need to show gratitude – the point is to show gratitude for that animal.”
